Biography

She is currently a Research Associate III with the EFNEP program at Colorado State University Extension. Katie is primarily responsible for paraprofessional training, curriculum development, and is the liaison to Human Resources, Risk Management and the Office of Equal Opportunity for the two programs. She has worked with EFNEP since 2006. Her master’s research project was to assess which EFNEP curricula were being edited/created due to the release of the 2005 Dietary Guidelines for Americans. This research project led to the development of the widely used nutrition education curriculum Eating Smart •Being Active, in which Katie is one of the primary authors. She has been involved in a variety of research projects targeting pregnant women and new mothers including interventions on infant and child feeding practices, food safety during pregnancy, and the effects of DHA on infant growth and brain development.

Research Interest

Her Research Interests includes Parent/Child feeding relationship and the effects on childhood risk for overweight or obesity, Nutrition education intervention on family’s overall diet quality, Maternal and infant nutrition, Physical activity in children (dosage, type, length, etc.), Food waste and the environment, Food and physical activity policy effects on individuals’ diet quality, etc.
